Who doesn't love a good excuse to eat? With Cinco de Mayo, I get to enjoy one of my favorite types of food: Mexican, ole! I figured this year I'd switch it up a bit and go for a completely meatless menu, which, quite frankly, isn't that hard to do when serving Mexican food. These meatless Mexican menu staples are perfect for any time of year, too. Serve alongside some Mexican street corn (aka elote), maybe a little lime cilantro rice, definitely a few cervezas--and you have the perfect meal for Cinco de Mayo. ENJOY!
