Who doesn't love a good excuse to eat? On Meatless Mondays (or Taco Tuesdays) I get to indulge in one of my favorite types of food: Mexican, ole! These three meatless Mexican recipes are perfect for entertaining as well. Serve alongside some Mexican street corn (aka elote), maybe a little lime cilantro rice, definitely a few cervezas--and you have the perfect meal for Cinco de Mayo, Dia de Muertos, or anytime. ENJOY!

Fun Fact: Contrary to popular belief, Cinco de Mayo (the fifth of May, duh), is NOT Mexico's independence day! The holiday actually celebrates Mexico's surprising victory over the French at the Battle of Puebla on--you guessed it--May 5th (1862). The Mexican army won the battle despite being smaller and ill-equipped.

Fun Fact: Cinco de Mayo is actually a bigger deal in the US than in Mexico. In Mexico, Cinco de Mayo is celebrated with political speeches and battle reenactments, many of which take place in Puebla.

Fun Fact: Holy guacamole! Did you know that acccording to the (very happy) California Avocado Commission, Americans consume up to 81 million pounds of avocados on Cinco de Mayo???

Thanks, Sarah! I have a vegetarian (pescatarian really) in the house so we do a lot of meatless meals around here :)
