I have some tried and true recipes in my arsenal that I will break out during special occasions. Since we’re a relatively small family (there’s 4 of us), I tend to use common dishes I know we enjoy--but with a twist. This Easter, I’m roasting a chicken and preparing just a couple of sides. But because these recipes are easy, delicious and affordable, they work perfectly for any Sunday dinner as well! Just add the usual accoutrements: a small tossed salad and flaky, buttery dinner rolls (our favorite kind). Easy Sunday Dinner Idea: One Main & Two Sides
If you're lucky enough to have leftovers, this chicken makes a delicious chicken salad. I add chopped walnuts and diced pineapple to mine to up the fruity-factor, but you can also try red and/or green grapes, diced apple or even some sliced pear. Why not?
