To me, cannelloni always sounded like a complicated recipe, especially since it was an Italian dish that my family never made. But this couldn't be more further from the truth! And pre-formed cannelloni shells make easy work of stuffing and baking.

Before we get to the recipe, I have a confession: I’ve always wanted to try my hand at making cheese, especially ricotta cheese, since it's so versatile and one of my favorites. Over the years I watched lots of videos, how-tos and DIYs for cheese making, and even though my interest was piqued, I never actually took the plunge, because it just seemed a bit...complicated. This cannelloni recipe is a bit different than traditional cannelloni recipes. Rather than using a heavy tomato sauce, we opted for a lighter, creamier bechamel sauce instead. Paired with a lightly dressed green salad and a glass of good pinot greeg, spinach cannelloni in a creamy bechamel sauce makes a great Sunday supper meal.
