I have some tried and true chicken recipes in my arsenal that I will often break out during special occasions or birthdays. Since we’re a relatively small family (there’s 4 of us), I tend to create recipes that I know we'll enjoy--picky eater and vegetarian included. This weekend, I'm keeping it low key by preparing a roasted chicken along with two simple yet delicious side dishes. Citrus Rosemary Roasted Chicken

If you're lucky enough to have leftovers, this chicken makes a delicious chicken salad: To diced chicken, I add chopped white onion, chopped walnuts and diced pineapple (along with a bit of the pineapple juice), and enough mayo to make the salad moist. You can also try a chicken salad with chopped red or green grapes, diced apple or even with pears and pecans...yum.
Creamy Butternut Twice-Baked Potatoes
For any twice-baked potato recipe, be sure to use a hearty baking potato, like Russet. The flesh is white, dry, and mealy, which works great for this recipe. The unexpected taste of the butternut squash is a sweet surprise, too.
