I have some tried and true chicken recipes in my arsenal that I will often break out during special occasions or birthdays. Since we’re a relatively small family (there’s 4 of us), I tend to use dishes that I know we all enjoy--but with a twist! For the holidays, I'm keeping it low key by preparing a roasted chicken along with two simple yet delicious side dishes. I'll add the usual accoutrements like a small tossed salad and soft, buttery dinner rolls, then watch them dig in. Roasted Chicken & Two Sides: The Perfect Anytime Meal
For a special occasion, try pairing this delicious chicken recipe with a crisp chardonnay, like this one from DeLoach Heritage Reserve. Bright flavors of mango and green apple are layered with a touch of vanilla leading to a round and creamy mouthfeel. The finish is clean and has a nice minerality characteristic with bright acidity.
If you're lucky enough to have leftovers, this chicken makes a delicious chicken salad. To the chicken and mayo I add diced onion, chopped walnuts and diced pineapple (along with a bit of the juice), but you can also try chopped red and/or green grapes, diced apple or even some sliced pear. Why not?
Chef's Note: For any twice-baked potato recipe, be sure to use a hearty baking potato, like Russet. The flesh is white, dry, and mealy, which works great for this recipe. The unexpected taste of the butternut squash is a sweet surprise, too.
