I have some tried and true chicken recipes in my arsenal that I will often break out during special occasions or birthdays. Since we’re a relatively small family (there’s 4 of us), I tend to use dishes that I know we all enjoy--but with a twist! This Easter, for example, I’m keeping it low key by preparing a roasted chicken recipe along with two simple side dishes. I'll add the usual accoutrements: a small tossed salad and soft, buttery dinner rolls, for example, and watch them dig in. Roasted Chicken & Two Sides: A Perfect Sunday Night Dinner
Pair this delicious chicken recipe with a crisp chardonnay, like this one from DeLoach Heritage Reserve. Bright flavors of mango and green apple are layered with a touch of vanilla leading to a round and creamy mouthfeel. The finish is clean and has a nice minerality characteristic with bright acidity.
If you're lucky enough to have leftovers, this chicken makes a delicious chicken salad. I add chopped walnuts and diced pineapple to mine to up the fruity-factor, but you can also try red and/or green grapes, diced apple or even some sliced pear. Why not?
