Summer time is the perfect time to pickle that gorgeous fresh produce your garden or farmer’s market is, well, producing. While you can pickle vegetables pretty much any time of the year, the warmer months (especially late summer) are perfect to begin pickling your veggie (and even fruit!) harvest.
Pickling is super easy, and you can pickle just about anything that fits into a jar. From cucumbers (duh) to eggplant, cauliflower, asparagus, red onions and garlic, using a simple brine of just a few ingredients will take the flavors of these veggies to a whole new level. Tip: Use super-fresh veggies for pickling. Anything bruised or past it’s prime is perfect for vegetable stock, but for pickling, fresh is best.
