Eggs In Purgatory, aka "Shakshuka" is a delicious, meatless one-pan meal that is traditionally prepared with a spicy blend of diced tomatoes and other flavors. We took it a step further and created three different versions of this classic egg dish using all of the original ingredients, and then some.

SHAKSHUKA ITALIANO
Shakshuka Italiano makes a simple yet tasty easy weeknight dinner. Minced garlic, fresh basil and parsley along with freshly grated Parmesan cheese add a flavorful Italian twist. Add a crusty Italian bread to dip into all that tomato-y goodness and a nice glass of Chianti and mangia. Buon appetito!
NOTE: If you want to add meat to this dish, consider crumbling some sweet (or hot, your call!) Italian sausage and sauteeing it in the pan before adding the other ingredients.
SHAKSHUKA ESPANOL
Classic Mexican spices like cayenne pepper, cumin and chili powder kick the flavor of this shakshuka up a notch. Feel free to add a little chipotle peppers in adobo por el calor, and serve alongside traditional rice and beans.
NOTE: If you want to add meat to this dish, consider dicing up some chorizo and sauteing it in the pan before adding the rest of the ingredients.

GREEK SHAKSHUKA BAKE
This Greek egg bake is a slightly off-beat version of Shakshuka. We eliminated the tomato sauce, and added generous amount of spinach and Feta cheese and instead. If you feel like you're missing the taste of tomato, consider adding some thinly sliced tomatoes to the top before baking. Pair with a lemon-y orzo pasta side dish to make a completely meatless meal.
