- 8 oz (225g) dark chocolate, chopped
- 1/2 cup (120ml) heavy cream
- 2 tablespoons (30g) unsalted butter, softened
- 1 teaspoon vanilla extract
- Cocoa powder, for rolling
- Optional chopped nuts & shredded coconut, also for rolling
Directions:
- Place the chopped dark chocolate in a heatproof bowl.
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat immediately.
- Pour the hot cream over the chopped chocolate and let it sit for 1 minute to soften the chocolate.
- Gently stir the mixture until the chocolate is completely melted and smooth.
- Add the softened butter and vanilla extract to the chocolate mixture, stirring until well combined.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until the mixture is firm.
- Line a baking sheet with parchment paper. Using a teaspoon or a melon baller, scoop small portions of the chilled chocolate mixture and roll them into balls.
- Roll the chocolate truffles in cocoa powder, shredded coconut and/or chopped nuts to coat evenly.
- Place the coated truffles on the prepared baking sheet and refrigerate for another 30 minutes to set.

Instead of using the usual chocolate chips or bar chocolate in our truffles, we're using these coin-sized wafers instead. These are also known as pistoles, disks, or feves. They melt perfectly and won't seize as fast as typical chocolate. Also when you bake with them they melt beautifully, creating a delectable chocolate puddle in your cookies or brownies.
