Who doesn't love a good excuse to eat? With Cinco de Mayo, I get to enjoy one of my favorite types of food: Mexican, ole! I figured this year I'd switch it up a bit and go for a completely meatless menu, which, quite frankly, isn't that hard to do when serving Mexican food. These Mexican menu staples are perfect for any time of year, too. Serve alongside some roasted ears of corn, maybe a little rice, definitely a few cervezas--and you have the perfect meal for Cinco de Mayo. ENJOY!

Contrary to popular belief, Cinco de Mayo (the fifth of May, duh), is NOT Mexico's independence day! The holiday actually celebrates Mexico's surprising victory over the French at the Battle of Puebla on--you guessed it--May 5th (1862). The Mexican army won the battle despite being smaller and ill-equipped.
Cinco de Mayo is actually a bigger deal in the US than in Mexico. In Mexico, Cinco de Mayo is celebrated with political speeches and battle reenactments, many of which take place in Puebla.
Holy guacamole! Did you know that acccording to the (very happy) California Avocado Commission, Americans consume up to 81 million pounds of avocados on Cinco de Mayo???
